Swiss Days 2008

8:15 AM Saturday, September 06, 2008

Swiss Days is my favorite day of the year!! I start counting down Swiss Days the day after it ends. I have been going with my family for forever and we keep going every year. John has picked up on the frenzy and he comes with me to hold my packages and watch all of the crazy ladies. We have so much fun checking out all of the fun ideas and I even pick up some ideas for me to make.

My cute Mom and my cute (Prego) Sister shopping their little hearts out!
Getting a scone at Swiss Days is a must! I also have to get a Swiss Taco (Navajoo Taco) but John can't stand them so no picture.

I am sure by know you are all sick of these posts of the hat I made for Charlotte. I am quite proud of it! I learned how to make the flowers for her hat and had them attached. It turned out so cute and I promise I won't show any more pictures of this darn hat!

My friend Leslie and I took our girls to a pond at some apartments to feed the ducks. They loved it and had alot of fun. William was fascinated with the water and kept going over by the edge of the pond. I asked him to come over by me and he thought it was a game so he took another step closer to the water and stepped in a hole of duck poo and mud. He fell in it and smelled like a sewer. Luckily there was a broken sprinkler and WE were able to wash off the best we could and head back to Leslie's for a picnic.

For my Birthday, my sweet Mother-in-law gave me this quilt she made. Isn't it Gorgeous? I love this quilt and I have been coveting this quilt for quite some time. She is the best at quilting and we LOVE getting the things she makes us!

Emily First Day of School

11:57 AM Thursday, August 28, 2008

Emily started 3rd grade 2 weeks ago. I know I am a slacker mom and posting really late. She is loving her teacher and her class. She really is growing up so fast and it has been so fun to watch her learn and get more responsible. Charlotte had to wear her shoes and socks like her Emy and pose with her too.

Sleepover

8:00 AM Wednesday, August 27, 2008

We had one of Emily's friends sleepover last weekend. I thought it would be so fun to sleep out on the tramp like I did when I was 12. Well, not so fun. First it was cold, second, the girls all sagged to the middle and I hate to be touched when I am sleeping, third I am NOT 12 anymore. The girls had so much fun and are begging me to do it again.

Emily, Mariah, and Char played dress-ups the whole time Mariah was here. Emily had so much fun playing with her friend.

Emily and Mariah made up a dance to Miley Cyrus and they were so cute. I took video of it but I don't think there is enough time to view it. Their dance was 2+ minutes long and I had to stop taping at 2 minutes.

We are finally getting blooms on our shrubs. We planted 5 of them 2 years ago and they have been struggling showing us any blossoms. This year all of our shrubs have blossoms. Charlotte is my little gardener and she is always out helping me pick weeds and "paydo's" (tomatos). We thought the flowers were so beautiful we took some pics for all of you to enjoy!

It's been a while since I made a post, but I had to share...

Made ribs tonight - holy cow, they were so good. Many thanks to Dad for encouraging me (in his own way) to get a Weber. Many more thanks for sharing a recipe with me that has made cooking ribs so much fun.

When I was working for 1-800 Contacts many many moons ago the chef there made the best dry rubbed ribs known to man. That was until just a few short months ago when I had the best ribs you'll ever eat. Dad tried out a recipe - don't worry, I'll share in a bit - that was divine. The ribs were slowed cooked, juicy, tender and flavored to perfection. That was take 1/2 (I only claim partial credit because I really only helped load the ribs on the grill and "watched" them as all good men do around meat on a fire).

Thanks to Mom and Dad Holt for being the guinea pigs on Take 1. Unfortunately - Take 1 was too dry, good flavor, but it a little "crunchy."
Thanks to Jen Summerhays for being the guinea pig on Take 2. These were much better, good rub and flavor, but not quite the moist tenderness that I needed.

Take 3, Sunday, August 17, 2008, we have achieved perfection. Perfect flavor, juicy, tender, heaven-on-the-bone-yummy.

I know, I know - every one of you wishes to be part of the next Knotwell sunday dinner. We would love to invite every one of you over, believe me. In the event that the invitations don't come as swiftly as you would prefer, here's the recipe if you want to try it yourself.

Ribs - I was fortunate to be able to experiment the first couple of times on "free" ribs. Missouri raised pork got me most of the way there. You can cook 3 racks of ribs on the Weber, so go to Costco and buy the value pack. Trust me, you'll be eating for a while.

Dry Rub: If you like BBQ Sauce ribs, this is not for you. You should boil the ribs for a bit, then bake them in your oven. BBQ Sauce is for wimps. :)

Here's the recipe from this book:
1/2 cup FRESH ground pepper
1/2 cup paprika
1/2 cup turbinado sugar (you might find this in your grocery store as "Sugar In the Raw." It is critical that you use this kind of sugar. Raw sugar is larger and sticks to the meat. If you use granulated white sugar, you will not be as pleased.
1/4 cup coarse salt (sea salt)
4 tsp dry mustard
2 tsp cayenne

Mix it all together in a bowl. This rub is enough to do 6 racks of ribs, so store it in a cool, dry place (your pantry works).

Cut your ribs into sections of 3 or 4 ribs each. Thoroughly rub the mixture on the meat. Yes, you need to get your ands dirty, don't be a girl about it.

Cook on indirect heat for 1 hour, 15 minutes (or until the juice runs clear). If you're using a kettle style (Charcoal) grill you'll want to cook on indirect flame. 22-25 briquettes on each side, add 10 more briquettes on each side after 30 minutes. If you don't have the ability to cook on indirect heat, bake in your oven. High heat is 350 degrees. Don't quote me on the time though, cause I don't cook in the oven.

Enjoy!

My latest knitting project

4:59 PM Saturday, August 16, 2008

I promised to showcase the hat I made for Charlotte, so here it is. She loves it and wears it all of the time. I am going to make a flower that will go on the side, so I will post that when I get it done. My mom-in-law Sally is going to give me a lesson over the phone on how to make them. I am actually taking another knitting class and learning how to make knitted UGG's called SNUGGS. This one will take me a while so don't hold your breath for a post in the near future. with those.

Jr., III, and IV

3:46 PM Wednesday, July 30, 2008

When we had John's dad come visit we FINALLY got a 3 generations picture taken. I know I should have posted back in the beginning of July, but this is really the first chance I have had to do this. What a handsome group of men!

On July 26th my beautiful Mom turned 60 years young. We surprised her and had my long lost brother and his family come to Utah for the weekend. She was so surprised to have them here and to have the whole family together. We celebrated by having family pictures taken up at our cabin. My girlfriend Michelle took the pictures and we had so much fun doing them. The last time we all got together Kattrina, Kari and I were all prego with the baby boys. Thanks for all of the help from the siblings for putting on this wild party for Mom!

I will post more pics when John gets done with manipulating them!

As you all know or should, that I have taken up knitting. I took a class and really enjoyed it so I signed up for another class in August. To keep me up on the knitting lingo I made a hat for my cute baby. He loves it! Charlotte asked me everytime I sat down to knit Will's hat if I was going to make her one. I am working on it now and I will reveal the final product in due time. I am going to learn how to make flowers for her hat. Stay tuned for some cuteness!

Memories

1:55 PM Monday, July 21, 2008

When I was a young pup I took dance, like most little girls. My mom saved my costumes all these years (Iknow there are alot) and I have taken them over. My girls love to dress up in them and perform. Emily had them on yesterday so I took some pics. She is so freakin cute!

Yesterday we made stepping stones for our yard. The girls had so much fun decorating them and putting their hands in the cement. William could have done without it. We put his foot in there to make the mold and his little toes curled up and made a large hole. They turned out so cute.

These are the final products.

First Pickins

I was out fertilizing our garden and to my surprise I found tomatoes! We have three plants total and this is the first to produce. I love to watch our garden grow and produce!

4th of July

12:44 PM Monday, July 07, 2008

Happy late 4th of July to all. This year our family was able to get Papa (John's dad) out here for the weekend. He got here on Thursday and is leaving today. We have had so much fun having him here playing with the kiddos and visiting our favorite spot in the summer, the cabin. We headed down to the cabin on Thursday night after Emily was picked up by Jared. Emily got to go to Bear Lake for the weekend, Lucky! Friday morning as tradition we went to the Provo City parade. We get the same spot every year have enjoy the parade every year. Our friends Dayna and Sienna go with us every year and we love that they do.

After the parade we went and secured ourselves some tubes to go down the Provo. My mom has never floated the river so she decided to come with us. What an adventure! We did really well until the train truss. The guides told us to get out at the bridge walk around it and then get back in. They call the train trusses the "Bridge of Death." Well my mom and I didn't have enough time to get out so we went under the bridge of death and barely survived it. I was off my tube and so was my mom and we made it to the side bend just beyond the bridge. John came over to make sure we were okay and he tried to help us get back into our tubes. Well my mom got into hers just as we got swept away and I was still hanging on for dear life when my sweet husband was telling me that there was a large log in the river and we were going to run into it. The adrenaline was rushing and I got my butt in that tube in record speed. The rest of the river was alot calmer and we got out with no problem. By the time we were done all of our arms were rubbed raw from paddling the water. My mom's is the worst by far. Her whole inside of her arms were raw and bleeding. My arms are raw inside by the elbow. We for sure are doing it again in August if anyone is up to the challenge! I didn't get any pictures of all of us so here are some pics of John and his dad John being silly.

Later that evening we went to Midway to watch the fireworks with our friends. We always buy a pack and do some before the big show. The kids loved it and I know John had fun puting on the show.

Thank You

6:27 PM Wednesday, July 02, 2008

William has been saying thank you for the last few days. I asked him to say it for the video and he did, but I have yet to hear it since. I didn't know boys are just as fickle as girls are.

Viewers Discretion Advised

10:09 PM Sunday, June 29, 2008

Have you ever seen anything like this? I sure as heck have not. John has turned into a grillin machine since he bought his Weber grill. He will search for recipes until the breaking dawn for that perfect one. He found this recipe and thought it would be fun to put a can of Ginger Ale up a chickens butt and see how it turned out. It actually was some of the best chicken I have ever had! We invited my parents to dinner and my dad could not stop eating the chicken. I know you all want the recipe, but I don't have it. You will have to contact the chef.

I have recently taken up knitting. Each time we visit John's parents, his mother is knitting away and making the cutest things. I am always so intrigued and so motivated until we get home. Well I decided to do something about it and I signed up for a class at Kamille's. She is the funniest and best knitting teacher (besides Sally, my mom-in-law). I completed my beginners knitting class and made this fabulous scarf with fringe. I know you are all so proud of me, me too! I have signed up for another class in August and I will be knitting some Snugs. You are all asking yourselves, what are snugs? Well they are like Uggs but you knit them and then felt them. Felting is when you throw your wool knitted project in the washer and it shrinks and turns into the finished product. I am so excited and I will post my projects. I am going to be knitting something in the mean time, so stay tuned!

Having fun swimming

7:32 AM Tuesday, June 24, 2008

We went to one of John's work collegues houses to go swimming on Saturday. We had so much fun playing in the pool, eating lunch, and having popsicles. JOhn wasn't feeling to well after he took a dive in the pool and later found out that he lost his eardrum. This was the ear that he is already deaf in so good thing he can still hear me, right? He is doing fine but he goes to the ENT on Wednesday to find out if he is going to get it reconstructed or if he gets to live without it. Wish him luck!
